Easy Apple Cinnamon Pastries

These easy apple cinnamon pastries, made with flaky puff pastry and sweetened with homemade cinnamon sugar, are a delicious way to welcome the season. And with just four simple ingredients, they’re as easy to make as they are to eat!
Featuring fresh honey crisp apples, a light dusting of stevia-sweetened cinnamon sugar, and a drizzle of caramel (if you want an extra indulgence!), these pastries are the perfect balance of sweet, tart, and buttery. Whether you're whipping them up for a cozy breakfast or an afternoon snack, these pastries are a sure way to bring the flavors of fall right into your kitchen.
Ingredients:
2 Honeycrisp apples
1 sheet puff pastry
Cinnamon sugar (either made by combining ground cinnamon and sugar or stevia, or store-bought)
Caramel topping (optional)
Instructions:
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Unroll a sheet of puff pastry and use a rolling pin to flatten out any creases.
Cut the pastry into strips (the width will depend on the size of your apples—use your judgment).
Wash the apples, then cut them into thick slices, removing the core from the middle of each slice (like a donut). Coat each slice with the cinnamon sugar.
Wrap the puff pastry strips around the apple slices until they are fully covered. Optional: Brush the pastry with melted butter or ghee.
Sprinkle more cinnamon sugar on top of each pastry.
Place the pastries on the baking sheet, leaving enough space between them for the pastry to puff and expand.
Bake for 15-20 minutes, or until the pastries are puffed and golden.
Remove from the oven and allow them to cool for at least 20 minutes. Drizzle with caramel, if desired.
