Hot Cocoa Cookies

These Hot Cocoa Cookies are the ultimate cozy treat for any chocolate lover! Soft and chewy, they’re rich and fudgy, topped with a smooth cocoa frosting and a handful of mini marshmallows that add just the right touch of extra nostalgia. Cozy, comforting, and packed with chocolatey goodness, these cookies are the perfect way to indulge in a taste of the season.
Cookie Ingredients:
3/4 cup unsalted butter, room temperature
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 1/2 large eggs
3/4 tablespoon vanilla extract
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon salt
Frosting & Topping Ingredients:
1/2 cup unsalted butter, room temperature
3 cups confectioners' sugar, plus more if needed to reach desired consistency
1 teaspoon vanilla extract
1/4 cup unsweetened cocoa powder
2-3 tablespoons unsweetened vanilla almond milk, room temperature
Topping: 1/2 cup mini marshmallows
Instructions:
Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a mixing bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy.
Add the eggs and vanilla, mixing until smooth and well combined.
Mix in the flour, cocoa powder, baking soda, and salt until a dough forms.
Use about 2 tablespoons of dough per cookie, rolling each into a ball and placing them on the prepared baking sheet. Gently press each ball into a disc shape.
Bake for 15 minutes, or until the edges are firm. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
While the cookies cool, prepare the frosting by combining the softened butter, confectioners' sugar, cocoa powder, almond milk, and vanilla extract until fluffy. If needed, add a bit more almond milk or confectioners' sugar until a spreadable consistency is reached.
Once the cookies are fully cooled, spread or pipe the frosting onto each one.
Finish each cookie with a few mini marshmallows.
