White Chocolate Valentine Cookies

When you have a really delicious chocolate chip cookie recipe but it’s almost Valentine’s Day…just add some food coloring, swap out semisweet for white chocolate chips and voila! You have some cute little white chocolate valentine cookies. They’re super easy to make and just oh-so-good. Here’s how to make ‘em!
Ingredients:
1/2 cup butter
1/2 cup granulated sugar
1/4 cup brown sugar packed
2 tsp. vanilla extract
1 egg
1 3/4 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. kosher salt
1 cup white chocolate chips
red or pink food coloring (optional)
Instructions:
Preheat the oven to 350° F.
Microwave the butter for about 40 seconds. Butter should be completely melted but shouldn’t be hot.
In a large bowl, mix butter with the sugars until well-combined.
Stir in vanilla and egg until incorporated.
In a separate bowl, mix the flour, baking soda, and salt - then, add to wet ingredients.
Mix dough until just combined. The dough should be soft and a little sticky but not overly sticky. Optional: Add in food coloring and combine.
Stir in chocolate chips.
Scoop out 1.5 tablespoons of dough (medium cookie scoop) and place 2” apart on greased baking sheet or one with parchment paper.
Bake for 7-11 minutes or until cookies are set. They will be puffy and still look a little underbaked in the middle.
