These healthy Samoa cookies are refined-sugar-free, gluten-free, and packed with natural sweetness. Plus, they’re incredibly easy to make, requiring no baking or complicated steps. Ready to transform this classic cookie into a healthy treat? Let’s dive in!
Ingredients:
10 pitted medjool dates
1 cup unsweetened coconut flakes
1/2 cup melted chocolate
Instructions:
Soak the dates in warm water to soften them.
Process the dates in a food processor or blender, adding water as needed.
Mix the processed dates and coconut together until well combined.
Roll the mixture into balls and place them on a lined baking sheet, flattening each with a spoon.
Make a hole in the center of each (I used a glass straw for this).
Place the baking sheet in the freezer while you melt the chocolate.
Remove the cookies from the freezer and dip the bottom of each in the melted chocolate. Drizzle additional chocolate on top and sprinkle with flaky salt, if desired.
Return to the freezer for 20 minutes.
