Peanut Butter Oreo Oatmeal Protein Cookies

These peanut butter and Oreo oatmeal protein cookies are high in protein, low in sugar and fat and the perfect pairing of chewy and delicious. Plus, each cookie is just under 60 calories which makes them THAT much better! Better yet, you only need one bowl to make ‘em.

Ingredients:

  • 1/4 cup GHOST Oreo Whey Protein

  • 1/2 cup Bob’s Red Mill old-fashioned rolled oats

  • 1 tbsp. Pyure Organic Granulated Sweetener

  • 1 tbsp. Pyure Organic Brown Sweetener

  • 1/4 tsp. salt

  • 1/8 tsp. baking soda

  • 2 tbsp. Teddie All Natural creamy peanut butter

  • Egg white from 1 large egg

  • 2 tbsp. maple syrup

  • 1/4 tsp. vanilla extract

  • 2 tbsp. mini chocolate chips or cacao nibs (optional)

Instructions:

  1. Preheat the oven to 350° F.

  2. Combine dry ingredients in a medium bowl.

  3. Add peanut butter and remaining wet ingredients, mixing until combined.

  4. Fold-in chocolate chips or cacao nibs (optional).

  5. Cover a baking sheet with parchment paper.

  6. Scoop out rounded tablespoons of cookie dough onto the prepared sheet.

  7. Bake for 8-10 minutes until edges are firm and golden brown.

  8. Let cool on the baking tray for 5-10 minutes.

  9. Serve and enjoy!
